Notes: Cantillon Kriek is brewed by Brasserie Cantillon, one of Belgium’s most authentic lambic brewers. This beer is made with carefully selected lambic of around one and a half year old and cherries. They are put in a chestnut barrel (500 liter of lambic for 150 kg of cherries) where a first fermentation will take place. After this initial fermentation, the content of the different barrels will be blended together and bottled, to create the Cantillon Kriek. Sometimes, some young lambic is also added at this stage. After a second fermentation of three to five months in the bottle, the Kriek is ready to be consumed. It is a pink-reddish beer, with a small pink head and a predominantly sour taste. It is generally considered as one of Belgium’s best Kriek beers. This is a traditionnal summer beer, a real thirst-quencher with an alcohol content of 5.0%.

Notes: "It has the colour of onion skin", said a voice behind me. It was Raymond Coumans. He was admiring the colour of the raspberry lambic reflecting in the red copper of the buckets used to empty the barrels. At that time (1986), "Raspberry-Lambic" already was synonymous with a sweet, artificially flavoured beer. This is why we decided to distinguish our beer from the other raspberry beers. Raymond proposed to call it a rosé, dedicated not to Bacchus but to Gambrinus. The process to make this beer is identical to the one to make Kriek. When young, the Rosé de Gambrinus will still present its full fruity taste. Later on, the lambic taste will become dominant at the expense of the fruit taste.

Inspired by the herb & spice flavors of this dark minty liqueur, we promptly filled the barrels with a rich porter. Notes: This beer is very unique and inspired by breweries in the Lambic region of Belgium and, especially, our friends at Cantillon. It is 100% spontaneously fermented, meaning yeast is not added. Once the beer is brewed, it is transferred to a cool-ship or “horny” tank located in our barrel room at the pub. There it sits overnight and collects whatever funky wild yeast and bacteria may be living in the room. The next day it is transferred to oak wine barrels where it ferments wildly and ages for a few months. The end result is a wild, spontaneously fermented, sour, and tasty hand-crafted beer! Notes: Toronado 25th Anniversary Ale started out as six individual brews, each with their own personality, and all incorporating Brettanomyces and or micro-organisms. Once the barrel aging was complete, Russian River’s Vinnie Cilurzo and Toronado’s David Keene got together to create the final blend. To create its fine carbonation, we re fermented the Toronado 25th Anniversary Ale in this bottle. Spent yeast cells from a thin layer of sediment in the bottom of the bottle. Pour slowly, allowing the natural yeast sediment to remain in the bottle. Notes: Bottleworks XII was created in conjunction with the Seattle based bottle shop of the same name for their 12th anniversary. Using our berliner culture and a Belgian-style witbeer yeast, we created an imperial sour wheat beer that was fermented in large oak barrels. We then added raspberries for the final month of fermentation.

Notes: If you aren’t already familiar with Chocolate Rain, it’s time to get to know her, because she’s about to become your best friend. Originally created as a single cask conditioned version of our Black Tuesday imperial stout for one of our release parties several years ago, Chocolate Rain has now taken on a life of her own. The base beer is a select few bourbon barrels of our imperial stout that can range anywhere from 16-21% in alcohol. Once those barrels are chosen, we spend an entire day slicing fresh vanilla beans to add to those barrels along with cacao nibs that are sourced by San Francisco based TCHO chocolatier. After a few months soaking up those rich, dessert-like flavors, the barrels are blended to taste and the result is one of the most decadent beers that we make. Rich in chocolate, vanilla, oak and bourbon, it truly puts the ‘imperial’ in imperial stout.

Notes: The Wanderer is a special blend of oak aged ales that we made with Craig and Beth from San Francisco’s City Beer Store. Blending a mix of sour ales and our anniversary ale the base of this beer has a delightfully sour tinge on top of a hearty malt backbone. To add to the flavor, Craig and Beth selected blackberries and bing cherries to be added to the ale adding to it’s already fruity complexity.

Notes: We began our sour ale project in 2006 with only four oak barrels previously used to age red wine. The number has grown over the years, along with the amount of sour ale we’ve brewed. Each barrel develops unique characteristics as it ferments independently, and just as Belgian brewers have been doing for centuries, we’ve sought out our favorite barrels, some young, some several years old, for blending. By blending the sour ale from these barrels together in various amounts, we created in this bottle a live harmony of tartness, fruitiness, and layers of flavor that can never be replicated.

Notes: Our friends at Oliver Winery have had a hand in our Sour Ale program since the beginning. The first oak barrels acquired by Upland were purchased from Oliver. Now, many years later, we are excited to present this collaboration between friends that represents our Sour Program full circle. VinoSynth Red is a blend of 50% Sour Reserve and 50% Malefactor Flanders-style Red Ale aged on Catawba grapes. Catawba is a native North American variety, known for making jams and jellies, and distinctly juice, fruity, exotic wines. Malefactor was blended with Sour Reserve to develop more body, mild bourbon barrel character, and a layered acidity to complement the Catawba’s innate sweet, fruity notes.

VinoSynth White is 100% Sour Reserve aged on locally grown Vidal Blanc grapes. Vidal Blanc is a French varietal with hints of tropical fruit flavor, commonly utilized to develop ice wines. Our Sour Reserve lends itself wonderfully to enveloping the acidity of the grape with notes of lactic acid, and allows the polite pineapple and grapefruit character of Vidal Blanc to shine on the palate.
